A New Recipe

Since spring has sprung (yay!) my friend Jen and I have been going to the Farmers Market once a week (more to come on that later). One vegetable in season that I love is Sweet Potatoes! So the past few weeks we have had a lot of sweet potatoes. I have roasted them, mashed them, made Sweet Potato Fries and Sweet Potato Chips each several times. I needed to find something new to do with them. I remembered a while back I made sweet potato quesadillas and decided to try them again with my own spin! They turned out really good and we now have a new way to enjoy sweet potatoes!


I first boiled the sweet potatoes and mashed them with a little bit of butter, balsamic vinegar, and sea salt.


While the potatoes were boiling I roasted some red pepper to go into the quesadilla.


I then spread the sweet potato mash over the whole grain tortilla and added some italian seasoning.


Then cut the red pepper I had roasted and added it to the quesadilla.


I then topped it with feta cheese, chicken* and spinach.


I then cut the quesadilla into 4’s and made a cranberry, feta and honey balsamic salad.

JJ and I enjoyed the meal and agreed it was a great way to add some variety to sweet potatoes! Do you have any other good ideas for sweet potatoes?

*Not pictured is the chicken. I placed a chicken in the crock pot that morning with chicken broth, salt, pepper and garlic. I then shredded it and placed it on the quesadilla.
